Yellow wax beans retain their color best when cooked whole at a high temperature for a short period of time. Snap off the pointy stem ends and remove any tough strings that run along the length of the bean. Rinse the beans under cold running water. Wrap wax beans in dry paper towels and refrigerate in a plastic bag for up to 3 days. The skin of their pods will be thinner and more velvety, and depending on their variety, choose ones that are light to deep yellow or dark purple. Look for beans that are evenly colored, free of brown spots, and snap when broken. Purchasing wax beans is much like purchasing green beans. Wax beans are simply green beans that have been bread to not have the chlorophyll pigment that gives green beans their green-ness. This gives us kidney beans that aren’t soggy or salty. We also prefer to use kidney beans that we have boiled from dry. Most commonly, the dish is made easy by using canned beans, however we like the fresh crispness that comes when we use fresh green beans (and wax beans, when they’re in season).
